How to Make Honey Crepes (with Orange & Blackberries) – Simple Classic Recipe

Ingredients for Honey Crepes

  • 140g plain flour
  • 200ml whole milk
  • 2 eggs
  • Generous tablespoon of honey (for natural sweetness)
  • Pinch of salt
  • Butter for greasing

 

How to Make Honey Pancakes

Step 1 — Prepare the Batter

  • Sift the flour and a pinch of salt into a medium-sized mixing bowl.
    Make a well in the centre.
  • Mix the whole milk with 100ml of water in a jug.
  • Crack the eggs into the well and begin whisking slowly.
    Pour in the milk mixture gradually, whisking continuously and drawing the flour in from the sides until fully incorporated.

  • Once the mixture is smooth with no lumps, add a generous tablespoon of honey.
    Whisk again until the honey is fully blended and the batter is silky.

    Lightly grease the pan with melted butter.
  • Use a ladle to pour around 2 tablespoons of batter into the pan. Swirl gently so the base is evenly coated — the goal is a thin, delicate pancake.
  • Cook for about 45 seconds until the underside turns golden.
    Flip with a palette knife and cook for another 30 seconds until lightly freckled.
