Research and health benefits :

The lavender plant, also known as 'espliego' in Spanish, is a herbaceous perennial shrub. Lavender honey is cherished by many for its beautiful warm flavour. Widely utilised in aromatherapy as an essential oil, lavender is renowned for its ability to promote relaxation and provide stress relief and may help with better sleep

Colour :

A lovely deep amber hue transitions to a light buttery yellow when crystallised, showcasing its natural beauty and purity.

Common uses :

Lavender honey offers exceptional benefits for skincare, aiding in the healing of burns, cuts, abrasions, and infections. Its versatility extends to culinary uses, where it adds delightful flavor to various recipes such as meat glazes, salad dressings, cakes, flapjacks, breads, pastas, and teas.

Why raw honey differs from processed honey :

Raw honey signifies honey that has undergone minimal processing, going directly from the hive to the jar with little interference. In contrast, most commercial honey undergoes extensive processing to enhance its appearance. This processing often involves filtering out nearly all pollen, pasteurizing at high temperatures, and blending with honeys from various sources. Raw honey exhibits natural variation from batch to batch as it is not subjected to factory processing, filtering, or over heating to achieve uniformity. Its characteristics are influenced by seasonal changes, climate, and the bees' foraging preferences.

Lavender SO good

I couldn't wait to try the lavender flavour as it has long been a favourite of mine. I wasn't disappointed as it does, indeed, taste great....I would love to say it helped me sleep well also, but NOTHING does that ! However, still delicious on bread, cereals or dissolved in hot milk.
